Job Title: Sous Chef

We are seeking a detail-oriented and organized Sous Chef to join our Kitchen team. The ideal candidate will be responsible to oversee all aspects of the culinary operations, supervision and coordination of the Kitchen.
In liaison with the Head Chef, the Sous Chef oversees all daily kitchen operations and outside catering. The Sous Chef supervises the staff of the kitchen, participates in the training and development of staff, and provides performance appraisals and disciplinary action.
● Streamline receiving procedures to ensure that only the best quality and the right quantities are received from both the suppliers and the stores
● Supervise preparation of mise-en-place (production) to ensure consistent quality production and proper use of recipes
● Work closely with the Unit chef in maintaining and improving the quality of food and service offered to our customers
● Combine efforts with the Unit chef to ensure strict controls of proper preparation, cooking, storage, presentation and service are adhered to by all members of the team.
● Ensure that all our storage facilities and other equipment are properly utilized, cleaned and well-kept.
● Create, implement and maintain department objectives e.g. food cost percentage by coordinating and putting in place all the necessary cost control measures
● Ensuring that the correct recipes and portion sizes are strictly followed by each member of the team
● Ensuring that no wastage through wrong storage, wrong cooking methods etc. is incurred
● Eradicating pilferage in the stores, kitchen and service departments through strict monitoring
Food Safety & Hygiene
● Maintaining HACCP and Food Safety documentation.
● Ensure cleanliness and hygiene are maintained in the various kitchen areas including refrigerators and storerooms to ensure high standards of freshness.
● Ensure food is stored in appropriate containers, labelled, and rotated to ensure high standards of freshness, minimizing waste and maximizing quality.
Skills and Abilities:
Diploma in Food production or a related field.
At least 3 years of progressive work experience in the hospitality industry.
Have knowledge of food costs and controls
Have extensive knowledge of kitchen management
Have exceptional employee relations skills with the ability to train.
